Okay. Peanut butter? Yum. Honey? Yum. (I just licked my fingers so I could type this.) These peanut butter cereal bites are sooooo good!

I’ve eaten 4 (or is it 5 now?) of them since I made them this morning. Yum! I just can’t help myself! I pushed off my lunch until almost 2pm because I was so full. Peanut butter has lots of protien, so they really do make a great afternoon snack to curb your appetite. Or they’re a fun breakfast if you’re on the run!

I’ve been reading a lot of recipes for these peanut butter cereal bites online, and a lot of people seem to have issues with getting them to set and be firm.I tested different methods for making them and I finally got mine to work out perfectly! So I can now say that (at least for me), the recipe at the end of this post works, and they set perfectly well for me.

Here’s a run down of what I tested:

The first time I boiled the peanut butter and honey mixture on the stove over low heat for about 2 minutes – and they hardened perfectly. Great method, but it uses more dishes, so I was looking for something simpler.

The second time I heated the mixture in the microwave for 1 minute and while they were firm enough to pick up with my hands, they were still a little gooey. Delicious, but perhaps a little sticky. The honey needs to be heated long enough to reach the point of being candied.

The third time I made them I made half the recipe, but doubled the microwaving time. I burned them. Oops. So be careful. Peanut butter will burn in the microwave!

The fourth time I made them, I added an extra 30 seconds of microwaving time and they turned out beautifully! So that’s the recipe I’ve added below!Microwaves vary, so if you chose to microwave them, the time you’ll need could be different from mine.

Tips: Dropping them into cupcake liners is a great way to make them easy to pick up. Or you can store them in the fridge – even the most gooey cereal bites will harden up in the fridge. Just keep in mind that if they didn’t set properly, they will soften up again after being taken out of the fridge.

This is one of those recipes that you can really personalize for your own tastes. If you like a little extra sweetness, you can make them with honey nut Cheerios.

Or if you prefer less sweetness, you can reduce the amount of honey slightly (increase the peanut butter slightly to make up for it). As long as you have enough peanut butter and honey mixture to cover the Cheerios it will work out just fine!

You can make the peanut butter and honey mixture in a small pot on the stove, or you can use a microwave safe bowl.

Microwaving is definitely a lot easier, but you have to make sure you heat it up long enough to solidify, but not so long that it burns.

And it CAN burn. If you start to smell toasty peanut butter, stop the microwave.

Add the Cheerios to the peanut butter and honey mixture and stir them until they’re coated.

Then drop them onto a parchment lined baking sheet. Or you can drop them into cupcake liners.

They’re soooooo good. I really have to stop eating them!

They should last for a few days if you keep them covered on the counter or in the fridge.

Peanut Butter Cereal Bites

Instructions

  • Add the honey and peanut butter to a large, microwave safe bowl.

  • Microwave on high for 1 minute. Remove and stir until well combined.

  • Return the bowl to the microwave for another 30 to 45 seconds.

  • Add the vanilla extract and stir well.

  • Add the Cheerios and stir until the cereal is well coated.

  • Drop portions onto a parchment lined baking sheet (or into cupcake liners). Allow them to set. They should harden up enough to pick them up within half an hour, but it takes a few hours for them to be more firm.

  • Enjoy!

Notes

- Microwaving times vary depending on the microwave. Make sure the honey is boiling or else it won't set. But also be careful not to burn it.
- Alternatively, you can bring the mixture to a boil on the stove over medium-low heat and let it simmer for 2 minutes, stirring constantly.
